Yield: about 2 cups

1.5 ounces Olive oil
2 onions Red onion, small diced
2 cloves Chopped garlic
4 pounds Cherry tomatoes, sliced in half
2 each Green apple, peeled and diced
.5 ounce Dark brown sugar
2 pounds Granulated sugar
2 each Cinnamon stick
1 ounce Red wine vinegar
2 each Zest and Juice of Lemon zest
TT Kosher salt and cracked black pepper

1. Heat oil then sauté onions until caramelized, then add garlic cook for 2 minutes.
2. Add remaining ingredients and simmer for 30 minutes or until the tomatoes look thick. Adjust seasoning.
